Homemade caramel-covered apples are awfully hard to resist at Halloween. Who doesn't remember these delicious treats from childhood? We've updated this popular confection by wrapping an outer layer of melted chocolate. around each caramel-dipped apple. A few plastic spiders makes a ghoulish garnish for the batch. Choose a tart, firm variety, such as McIntosh, to offset some of the sweetness of the caramel. When working with hot caramel, it is always a good idea to keep a bowl of ice water at hand in case you receive any burns.

Instead of spooning the chocolate over the apples, we've used resealable plastic bags to apply the chocolate coating. Once the chocolate is melted, transfer the melted chocolate to a resealable plastic bag, seal the bag and snip off a corner of the bag. Use the bag to pipe the melted chocolate onto the caramel apples. These caramel apples are best when served the same day they are prepared.

CARAMEL APPLES

Makes 6

Ingredients:

  • 6 medium McIntosh or other firm apples (about 1 1/2 pounds), washed and stems removed
  • 2 cups sugar
  • 1/2 cup dark corn syrup
  • 2 cups heavy cream
  • 1/4 cup unsalted butter
  • Chocolate Coating (recipe follows)
